Fried Oyster Omelette (Or Chien) Recipe

Or chien (fried oyster omelette) is surely one of Malaysians' favourite hawker street foods. Sadly, this childhood favourite seems to be getting harder and harder to find.  

Fret no more - satisfy those cravings with this easy recipe. The best thing is, you can use as much oysters as you like!

Step by step
Main Ingredients
  • 1/2 cup fresh oysters
  • 1 1/2 Tbsp tapioca starch
  • 1 Tbsp rice flour
  • 1/3 cup water
  • 3 large eggs
  • 1 tsp chopped garlic
  • 1/4 cup chopped spring onion
  • soy sauce
  • white pepper
  • sesame oil
Method
Step 1 
Mix the starch and rice flour with the water until well blended. Add the soy sauce, pepper and sesame oil into the egg mixture and mix well.
Step 2 
Heat some oil in a non-stick pan and drizzle the flour mixture onto the pan in a lattice/zigzag fashion until all the mixture is used up.
Step 3 
Just as the mixture is beginning to set, pour the egg mixture on top and scramble, frying it until the edges starts to crisp. Push it to one side of the pan.
Step 4 
Heat some oil and fry the chopped garlic until golden. Add the oysters and toss for a few seconds until just cooked. Fold in the eggs and add all the chopped spring onion. Briskly toss for a few seconds and season with some salt and pepper. Serve immediately with a slice of calamansi lime and chilli sauce.
